Happy Holly Daze Cocktail: The Ultimate Festive Holiday Drink
The Happy Holly Daze cocktail brings together creamy Irish cream, rich coffee liqueur, warming spiced rum, and cooling peppermint in a drink that seems built for the holiday season. Add milk, shake everything over ice, and you have a smooth dessert cocktail that can follow Christmas dinner, anchor a holiday cocktail menu, or give a bartender an answer when a guest asks for something creamy, minty, and festive.
What makes the Happy Holly Daze cocktail especially useful is the balance of familiar flavors. Baileys contributes cream, chocolate, and vanilla notes. Kahlua brings coffee and sweetness. Spiced rum adds warmth and a little more alcoholic structure, while peppermint schnapps cuts through the richer ingredients with a distinctive mint character.
It is considerably more substantial than a simple highball, yet the preparation could hardly be easier.
You do not need to make syrups, juice citrus, muddle herbs, or prepare complicated garnishes. The original Happy Holly Daze cocktail recipe simply calls for five ingredients shaken with ice and strained into a Collins glass.
The recipe is easy enough for a home bartender preparing drinks during a Christmas party, while the unusual combination makes it useful for professional bartenders who want another holiday drink in their repertoire.
Happy Holly Daze Cocktail Recipe
The original Happy Holly Daze cocktail uses a generous combination of liqueurs, rum, and milk.
Ingredients
- 2 oz Baileys Irish Cream
- 2 oz Kahlua coffee liqueur
- 1 oz spiced rum
- 1 oz peppermint schnapps
- 3 oz milk
- Ice for shaking
Recommended Glassware
We recommend serving the Happy Holly Daze cocktail in a Collins glass.
The tall glass works particularly well for this recipe because the finished drink has considerably more volume than a standard three-ounce cocktail.
How to Make the Happy Holly Daze Cocktail
- Fill a cocktail shaker with fresh ice.
- Pour in 2 ounces of Baileys Irish Cream.
- Add 2 ounces of Kahlua coffee liqueur.
- Add 1 ounce of spiced rum.
- Add 1 ounce of peppermint schnapps.
- Pour in 3 ounces of cold milk.
- Seal the shaker and shake until the mixture is thoroughly chilled.
- Strain the Happy Holly Daze cocktail into a Collins glass.
- Serve immediately.
The original recipe does not require a garnish, although there are several ways to dress up the presentation for a holiday party.
Before adding anything, try the Happy Holly Daze cocktail exactly as written. The combination already contains considerable sweetness, creaminess, and flavor, so extra syrups and toppings can quickly overwhelm it.
What Does the Happy Holly Daze Cocktail Taste Like?
The Happy Holly Daze cocktail tastes like a creamy coffee drink crossed with a peppermint holiday dessert.
The first impression is rich and smooth. Baileys and milk create the creamy base, while Kahlua contributes recognizable coffee flavor. Peppermint schnapps appears quickly and provides the cooling mint character that gives the drink its seasonal personality.
Spiced rum sits underneath those sweeter flavors.
You may notice vanilla, baking spice, and caramel-like notes depending on the brand of rum you use. Those warmer flavors are particularly useful because they prevent the Happy Holly Daze cocktail from tasting like nothing more than mint-flavored cream.
The resulting flavor profile includes:
- Coffee
- Peppermint
- Irish cream
- Vanilla
- Chocolate
- Baking spice
- Cream
- Subtle rum sweetness
If you enjoy peppermint mocha coffee drinks during the holidays, the overall flavor combination will feel familiar. The Happy Holly Daze cocktail simply approaches that combination from the cocktail side of the bar.
It is sweet, rich, and intentionally indulgent.
This is not the drink to serve someone asking for a dry Martini or a spirit-forward Manhattan. It is an excellent candidate when someone wants a creamy after-dinner drink, a Christmas cocktail, or something built around Baileys.
Why the Happy Holly Daze Cocktail Works
Five flavorful ingredients can easily compete with each other.
The Happy Holly Daze cocktail works because each component serves a recognizable purpose.
Baileys Creates the Creamy Foundation
Two ounces of Baileys make Irish cream one of the dominant ingredients in the Happy Holly Daze cocktail.
Baileys Original Irish Cream combines Irish whiskey and spirits with Irish dairy cream, chocolate and vanilla flavors. Those elements establish much of the drink’s dessert character before the other ingredients even enter the shaker.
Because Baileys already contains dairy, the additional milk extends that creamy texture without requiring heavy cream.
It is worth remembering that Baileys Original contains milk and milk products, so this version of the Happy Holly Daze cocktail contains dairy.
Kahlua Adds Coffee and Depth
Kahlua provides the second major flavor component.
The producer describes Kahlua Original Coffee Liqueur as a rum-and-coffee liqueur made with Arabica coffee beans. Its flavor profile includes black coffee, vanilla, chocolate, and sweet buttery notes.
That coffee component is especially important in the Happy Holly Daze cocktail.
Without it, Baileys, milk, and peppermint schnapps could create a drink that tastes primarily like mint cream. Coffee adds a darker roasted flavor that provides contrast and makes the cocktail more interesting.
Coffee and peppermint are also a familiar holiday combination, which helps explain why the Happy Holly Daze cocktail feels so appropriate during winter entertaining.
Spiced Rum Brings Warmth
Spiced rum changes the drink in a different way.
The Happy Holly Daze cocktail already has plenty of sweetness, so the rum’s primary role is structure and spice rather than simply making the drink sweeter.
Different spiced rums bring different combinations of vanilla, cinnamon, clove, caramel, and related flavors. You do not need to seek out a particular bottle solely for this cocktail.
Use a spiced rum that you already enjoy drinking.
A rum with strong vanilla and baking-spice characteristics tends to fit particularly well because those flavors complement coffee, cream, and peppermint.
Peppermint Schnapps Makes the Drink Distinctive
Peppermint schnapps is the ingredient that turns this from another creamy coffee cocktail into the Happy Holly Daze cocktail.
One ounce provides a noticeable peppermint presence.
That amount matters. Peppermint can dominate a drink quickly, especially when using a higher-proof schnapps. The goal is to taste peppermint alongside coffee, cream, and spice, rather than creating something that resembles alcoholic mouthwash.
If your brand of peppermint schnapps is particularly intense, there is nothing wrong with starting with slightly less and adjusting according to taste.
Milk Softens the Entire Cocktail
Three ounces of milk may look like a supporting ingredient, but it plays an important role in the Happy Holly Daze cocktail.
It reduces the intensity of the liqueurs and rum while extending the creamy texture. Milk also creates enough volume to make the Collins glass appropriate.
Whole milk will create the richest version.
Two-percent milk works if you prefer something lighter. Skim milk can be used, although the Happy Holly Daze cocktail will lose some of its body.
How to Make a Better Happy Holly Daze Cocktail
The Happy Holly Daze cocktail is straightforward, but technique still matters.
A creamy drink served too warm can feel heavy. Too much peppermint can overpower everything. Weak shaking can leave the cocktail poorly integrated.
A few simple habits improve the finished drink.
Start With Cold Ingredients
Keep the milk refrigerated until you are ready to use it.
Baileys can also be chilled ahead of time if you prefer. Starting with cold ingredients allows the ice to chill the Happy Holly Daze cocktail efficiently without requiring excessive dilution.
Use Plenty of Fresh Ice
Fill the shaker generously.
The Happy Holly Daze cocktail contains nine ounces of liquid before dilution, so a small shaker with a handful of melting ice cubes is not ideal.
You need enough ice to chill that volume quickly.
If your cocktail shaker is small, consider dividing the recipe between two shakes instead of overfilling it.
Give It a Firm Shake
Milk and cream liqueur benefit from shaking.
A proper shake chills the cocktail, adds a controlled amount of dilution, and thoroughly integrates the dairy with the spirits and liqueurs.
Shake until the outside of the shaker becomes very cold.
Taste Your Peppermint Schnapps
Peppermint schnapps varies considerably in intensity and alcohol content.
Before making the Happy Holly Daze cocktail for a party, taste the brand you plan to use.
If it has an extremely aggressive peppermint flavor, reduce the amount to 1/2 or 3/4 ounce for your first test cocktail.
The written recipe should remain your starting point, but adjusting to the ingredients in front of you is part of good bartending.
Serve It Immediately
The Happy Holly Daze cocktail is at its best immediately after shaking.
Have your Collins glass ready before you begin. If you are making several drinks, prepare the glassware and organize your bottles first so guests are not waiting while a finished cocktail warms on the bar.
How to Garnish a Happy Holly Daze Cocktail
The original Happy Holly Daze cocktail does not specify a garnish, and you do not need one for the drink to work.
During the holidays, however, presentation can make the cocktail feel more intentional.
Crushed Peppermint Rim
A peppermint rim reinforces the mint flavor and creates an unmistakably seasonal appearance.
Crush peppermint candies or candy canes into small pieces. Lightly moisten part of the rim and dip it into the crushed candy.
Consider coating only half the rim.
That gives the person drinking the Happy Holly Daze cocktail a choice between sipping through the peppermint garnish and drinking from a clean section of the glass.
Chocolate Shavings
Chocolate and peppermint are natural partners.
A small amount of grated dark chocolate provides aroma and visual contrast without dramatically increasing the sweetness.
Use a light hand.
Cocoa Powder
Dusting a small amount of cocoa powder across the top offers another simple option.
Unsweetened cocoa works particularly well because the Happy Holly Daze cocktail already has plenty of sweetness from Baileys, Kahlua and peppermint schnapps.
Fresh Mint
A small mint sprig creates a clean presentation and emphasizes the cooling character of the drink.
Gently slap the mint between your palms before adding it to release some of its aroma.
Whipped Cream
Whipped cream pushes the Happy Holly Daze cocktail more firmly into dessert territory.
It can work well for a Christmas party or after-dinner presentation, especially with a small amount of grated chocolate on top.
Keep in mind that the drink already contains Baileys and three ounces of milk. Adding a large layer of whipped cream makes an already rich cocktail considerably heavier.
Happy Holly Daze Cocktail Variations
Once you have made the original Happy Holly Daze cocktail, there are several useful directions you can take it.
Change one ingredient at a time so you understand what each adjustment does to the drink.
Make a Peppermint Mocha Happy Holly Daze
The original drink already contains the major building blocks of a peppermint mocha: coffee, chocolate-adjacent flavors, peppermint, and dairy.
To reinforce that profile, add 1/2 ounce of chocolate liqueur.
Try:
- 2 oz Baileys
- 2 oz Kahlua
- 1 oz spiced rum
- 3/4 oz peppermint schnapps
- 1/2 oz chocolate liqueur
- 3 oz milk
Reducing the peppermint slightly makes room for the additional chocolate flavor.
Shake the modified Happy Holly Daze cocktail with ice and strain it into a Collins glass.
Add Espresso
For a more coffee-forward version, add chilled espresso.
Half an ounce is a useful starting point.
Fresh espresso introduces roasted bitterness that can counter some of the sweetness of the original Happy Holly Daze cocktail. It also strengthens the connection between the Kahlua and the other ingredients.
Do not pour steaming espresso directly into a shaker full of dairy and ice. Let it cool first.
Make It Less Sweet
The Happy Holly Daze cocktail contains substantial amounts of Baileys and Kahlua, plus peppermint schnapps.
For drinkers who prefer less sweetness, adjust the proportions instead of adding additional ingredients.
Try:
- 1 1/2 oz Baileys
- 1 1/2 oz Kahlua
- 1 1/2 oz spiced rum
- 3/4 oz peppermint schnapps
- 3 oz milk
This version increases the spirit component while reducing the sweeter liqueurs.
It still tastes recognizably like a Happy Holly Daze cocktail, but the rum becomes more noticeable.
Make It Creamier
For a richer holiday dessert cocktail, replace part of the milk with half-and-half.
Try two ounces of whole milk and one ounce of half-and-half.
I would avoid replacing all three ounces with heavy cream. The combination of Baileys, Kahlua and cream can become overly heavy.
Make a Frozen Happy Holly Daze
The Happy Holly Daze cocktail can easily become a frozen holiday drink.
Add the ingredients to a blender with approximately one cup of ice and blend until smooth.
You may need to adjust the amount of ice depending on the blender and desired consistency.
For a milkshake-style variation, add a scoop of vanilla ice cream. At that point, you are intentionally turning the cocktail into a full dessert, so consider reducing the milk.
Add a Chocolate Drizzle
A small amount of chocolate syrup inside the glass works well with the existing coffee and peppermint flavors.
Drizzle the inside of the Collins glass before adding the Happy Holly Daze cocktail.
Avoid adding a large amount directly to the shaker unless you specifically want a much sweeter drink.
Happy Holly Daze Cocktail vs. a Mudslide
The Happy Holly Daze cocktail shares some obvious characteristics with a Mudslide.
Baileys and Kahlua are central ingredients in many Mudslide recipes, and milk or cream often provides additional richness.
The differences come from the spiced rum and peppermint schnapps.
A traditional Mudslide typically relies on vodka, Irish cream, coffee liqueur and sometimes cream. The Happy Holly Daze cocktail replaces that neutral vodka character with spiced rum and introduces a full ounce of peppermint schnapps.
The result is more seasonal.
Coffee and cream remain important, but peppermint and baking spices move the cocktail toward Christmas and winter entertaining.
If you enjoy Mudslides and want something in the same general family for the holidays, the Happy Holly Daze cocktail is a logical next recipe to try.
Happy Holly Daze vs. the B-57
Another Cocktail Servers recipe worth comparing is the B-57.
The B-57 combines Kahlua, peppermint schnapps, and Irish cream in equal proportions. That gives it three of the defining ingredients found in the Happy Holly Daze cocktail.
The preparation and drinking experience are quite different.
The B-57 is served as a layered shot, while the Happy Holly Daze cocktail adds spiced rum and milk before shaking everything into a full-size drink.
If you like the coffee, peppermint, and Irish cream combination but want something quick and concentrated, explore the B-57 on Cocktail Servers.
If you want a longer, creamier holiday cocktail, make the Happy Holly Daze.
Happy Holly Daze vs. the Absolut Zero
The Absolut Zero is another useful comparison because it combines vodka, Kahlua, peppermint schnapps, and cream.
Those ingredients create a similar coffee-and-mint foundation.
The Happy Holly Daze cocktail goes farther by adding Baileys and using spiced rum instead of vodka. Milk extends the drink and creates the tall Collins-glass presentation.
The Absolut Zero therefore provides a somewhat simpler peppermint coffee cocktail, while the Happy Holly Daze delivers additional creaminess and warming spice.
For a home bar stocked with Kahlua and peppermint schnapps, trying the two side by side can be an interesting way to understand how different base spirits change a drink.
When to Serve a Happy Holly Daze Cocktail
The name makes the obvious occasion clear, but this drink can fill several roles during the colder months.
Christmas Parties
This is probably the natural setting for a Happy Holly Daze cocktail.
The combination of peppermint, coffee, cream, and spice immediately fits a Christmas menu. A crushed peppermint rim can make the seasonal connection even stronger.
For a party, set up the ingredients together so you can make drinks efficiently as guests order them.
After Christmas Dinner
The Happy Holly Daze cocktail is rich enough to function as an after-dinner drink.
Serve it alongside dessert or in place of another heavy dessert course for guests who prefer drinking their sweets.
Holiday Cocktail Parties
A good holiday menu benefits from contrasting styles.
You might offer a sparkling drink, a whiskey-based cocktail, and the Happy Holly Daze cocktail as the creamy option.
That gives guests distinct choices instead of three variations on the same flavor profile.
Winter Gatherings
There is no reason to stop making this drink on December 26.
Coffee, peppermint, cream, and spiced rum continue to make sense throughout the colder months.
The Happy Holly Daze cocktail can work for New Year’s gatherings, winter dinner parties, or a casual evening at home.
Behind the Bar
Professional bartenders may find the Happy Holly Daze cocktail particularly useful during December.
A customer asking for something with Baileys, a peppermint drink, or a creamy Christmas cocktail gives you an opening to recommend it.
It also uses bottles commonly found behind many full-service bars.
How to Batch the Happy Holly Daze Cocktail for a Party
The Happy Holly Daze cocktail can be batched, although dairy requires a little more planning.
For four cocktails, combine:
- 8 oz Baileys
- 8 oz Kahlua
- 4 oz spiced rum
- 4 oz peppermint schnapps
- 12 oz milk
For eight cocktails:
- 16 oz Baileys
- 16 oz Kahlua
- 8 oz spiced rum
- 8 oz peppermint schnapps
- 24 oz milk
Keep the batch refrigerated.
Because the Happy Holly Daze cocktail contains milk and Irish cream, do not leave a large pitcher sitting at room temperature for an extended party.
For the best texture, pre-batch the liquid and shake individual portions over ice as guests order them.
Measure nine ounces of the mixture into a shaker, shake with fresh ice, and strain into the Collins glass.
That approach gives you the convenience of batching while preserving the freshly shaken character of the original recipe.
Common Happy Holly Daze Cocktail Mistakes
The recipe is easy, but several small errors can produce a less enjoyable drink.
Using Too Much Peppermint
Peppermint schnapps is assertive.
The written Happy Holly Daze cocktail recipe calls for one ounce, but brands vary. Taste yours and adjust when necessary.
Once peppermint overwhelms a cocktail, it is difficult to recover the other flavors.
Adding Too Many Sweet Garnishes
Candy cane syrup, chocolate syrup, caramel sauce, whipped cream, and crushed candy may sound festive together.
They can also bury the actual cocktail.
Choose one or two garnish elements and allow the Happy Holly Daze cocktail itself to remain the focus.
Using Warm Milk
Cold ingredients make better cold cocktails.
Starting with warm milk forces the ice to do more work, which can result in extra dilution before the drink reaches the proper temperature.
Under-Shaking
Nine ounces is a substantial cocktail.
Give the Happy Holly Daze cocktail enough time in the shaker to chill completely and integrate the dairy with the alcohol.
Using a Glass That Is Too Small
A standard cocktail coupe may look elegant, but this recipe contains nine ounces before shaking.
Use the recommended Collins glass or another tall glass with sufficient capacity.
What Food Pairs With a Happy Holly Daze Cocktail?
The Happy Holly Daze cocktail is already sweet, so the best pairings often provide contrast.
Dark Chocolate
Dark chocolate works particularly well with coffee and peppermint.
Choose something with enough cocoa intensity to stand up to the sweetness of the cocktail.
Chocolate Cake
Chocolate and peppermint are a classic combination, making chocolate cake an obvious pairing.
A less-sweet cake may work better than heavily frosted versions because the Happy Holly Daze already brings plenty of sugar.
Cheesecake
Plain cheesecake provides a neutral creamy background for the coffee and peppermint flavors.
Chocolate or espresso cheesecake can reinforce those respective elements.
Shortbread Cookies
Buttery shortbread provides a simple accompaniment without competing with the drink.
This can work particularly well at a holiday party where guests want something small rather than another full dessert.
Salted Nuts
Salted pecans, almonds, or mixed nuts create contrast against the creamy sweetness of the Happy Holly Daze cocktail.
The salt also complements the warmer notes from the spiced rum.
Gingerbread
Ginger, cinnamon, and molasses flavors pair naturally with spiced rum.
A small gingerbread cookie beside the Happy Holly Daze cocktail makes a particularly seasonal presentation.
Frequently Asked Questions About the Happy Holly Daze Cocktail
What is in a Happy Holly Daze cocktail?
The Happy Holly Daze cocktail contains Baileys Irish Cream, Kahlua coffee liqueur, spiced rum, peppermint schnapps, and milk.
The original proportions are 2 ounces Baileys, 2 ounces Kahlua, 1 ounce spiced rum, 1 ounce peppermint schnapps, and 3 ounces milk.
How do you make a Happy Holly Daze?
Add all five ingredients to a cocktail shaker filled with ice. Shake until thoroughly chilled and strain the Happy Holly Daze cocktail into a Collins glass.
Is the Happy Holly Daze a Christmas cocktail?
The recipe can technically be served any time of year, but peppermint, coffee, Irish cream, and spiced rum give the Happy Holly Daze cocktail a flavor profile that works particularly well during Christmas and the winter holiday season.
Is the Happy Holly Daze cocktail sweet?
Yes.
Baileys, Kahlua, and peppermint schnapps all contribute sweetness. Milk softens the drink, while spiced rum provides warmth and additional structure.
Drinkers who prefer less sweetness can reduce the Baileys and Kahlua slightly while increasing the spiced rum.
Can I make the Happy Holly Daze without milk?
You can, but the drink will be considerably stronger and richer.
Milk provides volume and softens the liqueurs. If dairy milk is the issue, you can experiment with an alternative milk, although the texture and flavor will change.
Remember that traditional Baileys Original also contains dairy.
What kind of milk should I use?
Whole milk creates the fullest texture and is my first choice for the Happy Holly Daze cocktail.
Two-percent milk provides a slightly lighter drink.
You can experiment with half-and-half for additional richness, although replacing all the milk with cream may make the cocktail too heavy.
Can I use another coffee liqueur instead of Kahlua?
Yes.
Another coffee liqueur can work, but its sweetness and coffee intensity may differ.
Because Kahlua accounts for two ounces of the Happy Holly Daze cocktail, changing the brand can have a noticeable effect.
Can I use another Irish cream instead of Baileys?
Yes.
Baileys is specified in the original Happy Holly Daze cocktail recipe, but another Irish cream liqueur can be substituted.
Taste the alternative first because sweetness, alcohol content, and texture vary by brand.
What spiced rum works best?
Use a spiced rum you enjoy.
Vanilla, caramel, and baking-spice notes work especially well with the coffee, cream, and peppermint already present in the Happy Holly Daze cocktail.
Can I reduce the peppermint schnapps?
Absolutely. If you are sensitive to peppermint or using an especially intense schnapps, start with 1/2 to 3/4 ounce.
You can always add a little more.
Can I make the Happy Holly Daze frozen?
Yes. Blend the ingredients with ice until smooth. You can also add vanilla ice cream for a richer dessert version.
Can I make the Happy Holly Daze ahead of time?
You can pre-batch the ingredients and refrigerate the mixture.
Shake individual portions with ice immediately before serving for the best texture and temperature.
Does the Happy Holly Daze cocktail contain dairy?
Yes. The original recipe contains milk, and Baileys Original Irish Cream also contains dairy.
What glass should I use?
We recommend a Collins glass for the Happy Holly Daze cocktail.
The tall glass provides enough capacity for the nine-ounce recipe plus any slight increase in volume from shaking.
